I make lots of different dishes that some people would probably turn their noses up at lol. My meatloaf is unconventional and my husband has had to get used to my different way of cooking.
Mama's Unique Meatloaf
My meatloaf is totally different than the old standby that's topped with ketchup. Here is a "recipe" I do most of my cooking by taste and look and smell so change as wanted.
2 lbs ground beef
1 lb sausage (I like the spicy kind but the hubs is a wuss so regular Jimmy Dean)
1/2 of a medium onion a bit less than a cup
Diced Garlic, as much as want
2 eggs, they do some binding thing or something IDK all I do know is they go in
some cornmeal for a binding agent* about a halfish of a cup
Johnny's Seasoning salt if you don't like it use some other seasoning lol
Feta Cheese as much as you want in it
Optional: I make a second loaf for my husband, he likes mushrooms in his you can add other random things that you think would taste good.
Bacon a few slices
Preheat oven to 350
Mix the meats (raw meat gag, use rubber gloves if possible)
Add the egg, cornmeal, garlic, onion and Johnny's or other seasoning
Combine thoroughly
Add the cheese or whatever you use, I highly recommend herbal feta its GOOOOOD
Squish as little as possible after adding the cheese
Shape into a loaf shape
Lay bacon strips on top, this is optional of course but it really adds a nice smokey flavor to the meatloaf.
Place in pan, I use a pan that has a grate that holds it up off the bottom that way a lot of the grease drips off and it doesn't sit in it.
Put that sucker in the oven, I usually cook for the first hour or so with foil covering it. I then take it off then cook it till the internal temp is high enough. After that happens I cut it open to make sure it's done lol. If the bacon didn't get crispy turn on the broiler for a minute or so, keep a close eye on it if you do this.
While the meatloaf is cooking boil up some garlic mashed potatoes. I generally serve my meatloaf with mashed potatoes, brown gravy made with drippings (the bacon and cheese make it tasty), and broccoli.
Tip: I really really don't recommend using a loaf pan for this, you can however make them into meatballs or patties. It's really good either way. Of course you skip the bacon when you do the alternate forms.
Another Tip: I have also substituted a pound of ground lamb in place of one of the pounds of ground beef. It's yummy, it gives it an almost Greek taste, kinda gyro-ish.
*I use cornmeal to make it gluten free, you can use bread crumbs, crumbled soda crackers, or oatmeal, my mom used rice sometimes but I always thought that was horrible.
WARNING this is not a low fat dish, this is a once in a while thing. Don't go blaming me for any weight gain this tasty dish may cause lol.
